I started doing 3 tier chocolate wedding cakes in 2000 for one of my friends. Since then I have done several cakes for wedding clients, 3 and 4 tier, white or dark chocolate.
The chocolate I use is Callebaut Finest Belgian Chocolate. It is 70% cocoa solid. This is a high cocoa content but it is required to produce a really rich, dark delicious cake. Ground almonds as an ingredient help to keep the cake moist and so it will keep in an airtight container for several weeks.
The Icing is a Ganache - this is the same chocolate as used in the cake, incorporated with butter. For the white chocolate cakes it is a dark chocolate cake with white chocolate ganache. For the sides of the cake I use dark or white chocolate cigars/curls. Or you can leave it plain. This is identified and reflected in the pricing.
The cake can be decorated with fresh fruit - seasonal berries are the best, although I have used figs, oranges, grapes, kumquats etc. Many couples tend to serve the cake as dessert with the evening buffet, or as dessert with the main meal, with extra fruit and Ice Cream or Cream.
Prices start from £320 for a 3 tier and £345 for a 4 tier.
